usually they don't

no one ever said they do

only few games allow such things

there are in some games certain minor story aspects that are affected by the choices in the battle and the outcome

you only get bragging right as most of those fights have nothing to do with the story ether

another draw back of fighting those is that the last boss is usually way to easy by the time you beat the side bosses

as for the weapons weren't they only in 7 and 8

and in 8 they were easy as well, 8 really was about lvl up, it's just not limited to characters but once you level up all the summons and characters to max nothing is a challange outside of that one boss fight becuase apparently from what's been stated on the net the average beat time is about 30 minutes

7 was the only one where it was more about combinations than levels

8 wasn't about lvls at all!!!
8 was about junctions

lvl up your summons and you'd kill nearly anything

juctions boosted your stats but once you did it you didn't have to think about it anymore

Diablos always hits for 9999 when maxed (unless it's a certain boss) cactuar always hit for 10,000 when maxed, and eden hits for over 13,000 at low levels like 8-13 never even bothered to max it

I don't recall lvling the summons
but I do recall the junction system

it has been quite some time since I played FFVIII
